Broccoli & Tomato Salad with a Creamy Feta Dressing

The perfect blend of crunchiness and creaminess, this salad is one of my favourites. It's quick and easy to make, plus it's absolutely delicious!

Serves 1

40 g Feta - Low Fat

40 ml Yoghurt - Low Fat Natural

1/4 Broccoli Head Medium1 Tomato Medium

1/4 Cucumber Medium

1 sprigs Fresh Mint

Black Olives

1/2 Juice of a Lemon

Method:

First cook the broccoli in a pan of boiling water or in a steamer until tender and place in some cold water to cool down.

When cooled and drained mix with the chopped tomato, cucumber and olives (optional).

To make the dressing, place the following in a blender or whisk together in a bowl - the crumbled feta, yoghurt, lemon juice, chopped mint and seasoning.

Mix the dressing through the salad and serve straight away - If you are making it for later in the day, then store the salad and dressing separately and mix just before eating.
